We make Dips, Salad Dressings, Chutneys & Relishes, Butters, Marinades, Mayonnaises, Sweet & Savoury Sauces and Condiments. We will develop recipes and/or manufacture to your recipe.

We welcome mail order enquiries from regional retailers and from individuals, if we cannot refer you to a retailer near you.

XO Sauce
Occasionally we make our excellent XO Sauce. The ingredients for this can be costly; they include dried Scallops (Conpoy) which can cost up to $300/kg and several other difficult to source such as Chinese Jinhua Ham and dried Prawn Roe. This sauce is thought to have originated at the Peninsular Hotel, Hong Kong, one of the best hotels in the world, in the 1980s. It is named XO after the better French Cognacs, to confer an aura of superior quality. Top chefs have their own closely guarded recipes and our recipe is an amalgam of the best of recipes from our library of cookbooks and trawling the Internet.
